~小品文章分享~開箱文請往下喔~ 軟炸蟹油 【所屬菜系】 韓國 【特點】 顏色淺黃，軟嫩鮮香，味濃醇香 【原料】 鮮海蟹4公斤（雄尖臍的），雞蛋清125克，麵粉25克，澱粉40克，花生油750克（實耗75克），味精5克，料酒5克，雞湯250毫升，牛奶50毫升，花椒鹽25克，熟芝麻25克，精鹽10克 【製作過程】 1、將海蟹洗淨，上屜蒸熟，取出，掀開蟹蓋，取出蟹油，再將蟹油周圍的黑膜洗淨，擇好，放入開水中焯透，撈出，控水，待用， 2、再將湯勺坐上火，加入雞湯、味精、料酒、精鹽、燒開後，放入焯透的蟹油，改小火煨，入味後，撈出晾涼。 3、把雞蛋清放入瓷碗中，用筷子向一個方向連續抽打成泡沫狀（以泡沫中能立住筷子為準），再加入澱粉拌勻成蛋清糊 4、再把炒勺上火，加入花生油燒熱。同時，把蟹油沾勻一層麵粉，再沾勻一層蛋清糊，逐一下入油中，炸成淺黃色，撈出，放入盤中。 5、然後，將湯勺上火，加入雞湯、味精、料酒、精鹽、燒開後，加入牛奶、熟芝麻，用濕澱粉勾成流汁，盛入碗中 6、食用時，炸好的蟹油放入盤中，隨帶花椒鹽一小盤和一碗勾兌好的芝麻流汁，即可 |
